My Yummy & Simple Lunch

I can be a very indecisive person when it comes to what I want to eat and I'm easily that person who um's and ah's at a restaurant or cafe when choosing what to order!  For a while now have been trying to eat less processed foods so I've quite enjoyed eating dishes with more fresh ingredients!

This is something I've had for lunch a few times while I've been at home.  It's really simple to make and depending on how you want to cut some of the vegetables and your skills with chopping up vegetables it doesn't take that long to make either!

For this lunch, I used one baby carrot which I peeled (optional) and then cut it in half and then sliced it up as thinly as I could.  I had half a tomato and roughly chopped that up, some button mushrooms where sliced up and two things of asparagus were cut into smaller pieces.  I grabbed a generous handful of spinach leaves and also an egg which our chickens kindly gave us!

I had planned on making a frittata styled lunch but ended up just boiling the egg, because you know I'm not a masterchef and didn't want to burn the kitchen down haha!  I put a little bit of oil in a pan and just cooked all the vegetables starting with the carrots and asparagus, then putting in the mushrooms, tomatoes and lastly the spinach leaves.  I did put a little bit of soy sauce over the top to finish it and had seasoned it all with a little bit of salt and pepper!

I thought it tasted amazing and smelled so nice!  Mum even agreed so it must have been good!  This is the type of thing I'd take with me to uni for lunch, maybe take out the egg, but the vegetables I say yes.  Let me know what you think of it and if you'd try it yourself!

Until next time, keep smiling :)  Em xx

International Food & F.R.I.E.N.D.S Night

I love food and I also love the tv show Friends as do two of my friends from university so for the past three weeks, Tuesday nights have been our international food and Friends night!  I can't remember why we started it, I know one day we were talking about curry and one of the girls had the entire set of Friends DVD's and food (curry at the time) and Friends seemed like a perfect combo!

The first night we went for Indian food and had two types of curry.  Butter chicken (which is my fave!) and also a chicken and potato and bean one (edit been told it was korma!) which was so good!  We brought some naan bread and poppadoms from the supermarket because we had no clue how to make them and it was just easier.  Natalie and Ainslie did the curry and I had the hardest task of doing the poppadoms!  Was quite challenging having to spray them with oil and pop them in the microwave...  Hashtag masterchef!  It was difficult stacking them.  But all those building and technology classes at uni helped out because my Leaning Tower of Poppadoms never fell over!  The girls also made brown rice to go with the curry and we also had some steamed veggies which were delicious!  Love me some veggies!

Last night we decided upon Mexican and had some tacos!  I hardly ever have tacos so this was a nice change!  Ainslie made some guacamole which I was keen to try.  I think avocado is an acquired taste and I've had some well interesting experiences with it in the past!  The one Ainslie made was delicious but I don't think I'll be reaching for avocados anytime soon!  A little salsa style dish was also made and that was so tasty!

And watching Friends was awesome!  Ainslie knows all the episodes essentially back to front!  We're starting right from season one and I am obsessed with Rachel Greens wardrobe!  We also watched the first Pitch Perfect movie the other night and we're planning on watching Age of Ultron soon because we never went to see it when it was at the movies!!

We're going to be having an Italian night soon and I'll be doing a bacon risotto!  And also a Greek night will be happening soon because I'm in it for the haloumi!!!  If you have any dishes you think would be yummy to try give a comment and let me know!  Can be from any nationality!  We'd all love to know!

Until next time, keep smiling :)  Em xx

Music On Repeat: Volume 3

I am constantly listening to music!  Whether it's on music from my phone, from Spotify or the radio I will always have music playing! I thought I'd share with you all the songs I've been reaching for whenever I want some tunes!  Hope you like some of them!

Little Sea - Change for Love:  I haven’t been listening to Little Sea for that long but am annoyed I never listened to them sooner!  I remember hearing this in a playlist I was listening too and never bothered to check what the song was called or who sung it and also couldn’t remember any of the lyrics so it was a while before I found it again and bought the song before I forgot!  Little Sea is a boy band from Sydney in Australia I wish they would come and do a show in Tasmania!

One Direction - Drag Me Down:  Man has there been some drama in the land of One Direction.  Either way I love this song!  I was at my friends apartment and we were about to leave and while she was putting on shoes I checked twitter and saw a new song had been dropped and we ended up leaving a little later because we had to get the song and then we had to listen to it a few times before it was right to leave haha with Zayn not being in One Direction there is a bit missing, which is understandable but I absolutely love this!  And the music video!  Can imagine there was a spike in people wanting to become an astronaut!  I’m looking forward to the fifth album and can’t wait to see what their new music is like!  I’m not sure when it’s meant to be released but apparently they’re just going to drop it??  I don’t know, I just hope people don’t leak it and are just patient and wait!

Taylor Swift (feat. Kendrick Lamar) - Bad Blood:  I’ll be honest, it’s taken me a while to enjoy music from Taylor Swift.  I don’t know, I’ve just never really loved her music until her most recent album 1989.  Mum and I usually play the album in the car and I’m yet to put it on my phone but bought this version of Bad Blood as it didn’t come on the album.  This is a song that I’ll always listen to while I’m exercising, and I do sometimes (okay a lot of the time) pretend that I’m in the music video hahaha

Little Mix - Black Magic:  Such a catchy song!  When I’m walking to uni I’ll always put this one on first and it’s a good beat to walk to and I do sometimes forget I’m in public and will start singing along…  Which must be amusing for the passing drivers to watch but for me it’s a little embarrassing!  I can’t wait to hear Get Weird – going to be an amazing album!

Zedd (feat. Troye Sivan) - Papercut:  I adore Troye Sivan!  He’s one of my favourite youtubers and I absolutely love his music!  I’ve never really listened to that much music from Zedd but have loved his True Colours album.  I’ve got a few songs which I love (list songs) and Papercut has to be one of my favourites from the album.  I love Troye’s voice and would love to hear him sing live one day – that would be the dream!

Little Mix - Salute:  I’ve recently started listening to Salute again since I’ve started exercising again and absolutely love having this song playing when I’m on the exercise bike!  I’m also that person who has watched the music video so many times that she’s tried to learn the dance but has failed miserably!  I can do some of the start but after that and it’s just me doing whatever and dancing around my room!

Little Mix - Hair:  I do have a soft spot for Little Mix in my heart!  I watched their X-Factor journey and have loved them ever since!  I’d normally wait to get their music until their album comes out but bought this off iTunes when it was released and this is the first song I go to when I’m getting ready for the day!

Keith Harkin - Now We Are Free:  I’ve been lucky enough to both see Keith Harkin perform live but also meet him and it was one of the coolest days!  Keith has an amazing voice and this is probably one of my favourite songs he’s ever performed with Celtic Thunder.  I got to hear this one live at the concert I went too and was captivated!  I’ll sing along to it at home but probably ruin how to pronounce the lyrics as they’re in Gaelic and not English, but man it is a beautiful song!

So there you have it!  My favourite tunes of the moment!  What have you been loving to listen to?  Would love to listen to new artists and see what you all love!

Until next time, keep smiling :)  Em xx

Spring Blooms

Spring is such an awesome season!  The weather starts to get warmer, little lambs are born and also new flowers bloom and it just looks beautiful!  Although my favourite month is Autumn I do love Spring is probably my second favourite month!

Where I live we've been having some beautiful weather!  The weekend was so warm and even though I was in bed for the majority of Sunday it was just so sunny and I was in such a bad mood because I was inside!  Today though oh my goodness it was beautiful!  To a certain degree haha the clearest blue skies and it was so warm!  Only problem was that I was wearing jeans and a jumper...  Not ideal and I walked across town instead of catching the bus so I was HOT!  I cannot wait for summer!!

Probably the worst thing about the warmer months are the bees...  And wasps.  Especially when they hang out right by the back door.  I'm not a fan of them when they do that haha

I just love seeing all the flowers bloom around my house and all over the place :) it's just so beautiful!  I have a dogwood tree outside my bedroom window and I cannot wait for the leaves to appear - it's so stunning!  And at night time when the moon is out and the leaves are white it's just magical!  Sometimes a little bright but wonderful either way!

Whatever season you are in at the moment, I hope you are having an amazing time!  I do wish I could experience autumn around this time of year and especially winter for Christmas - that would be the dream!

Until next time, keep smiling :)  Em xx

S P R I N G

I swear Tasmania just does not want to cooperate with the seasons.  Where is the spring sunshine?!??!  It was here yesterday and it was beautiful and now it's gone!  Bothersome clouds haha

But spring is here in Australia and this means warmer weather is on the say and summer will be around soon and then Christmas...  There are already Christmas decorations popping up in stores and I'm walking around going "we've just entered September!"  I don't start decorating for Christmas until December rolls around but I've seen people start planning how they're going to decorate their house - they've got a serious game plan on for Christmas!

It was Father's Day yesterday and my family went out to breakfast and it was really nice!  We went to our usual place, Ingleside Bakery Cafe and we luckily got a table by the open fire which was amazing!  I do love a wood fire and I won't say no to sitting by one and having a delicious breakfast!

I usually get the same thing each time I go there but opted for something different and boy and I glad I picked something different!  It was DELICIOUS!  My breakfast included a sourdough bread with garlic butter, spinach and topped with two field mushrooms, two eggs and some melted cheese over the top!  There was a little salad as well which has the nicest dressing and I also got some bacon as extra because I do love me some bacon!  I also got a hot chocolate because they do an AMAZING hot chocolate!

My family didn't do any presents for Father's Day, something which other families find weird but it's just how our family goes!  We've never really placed a heap of emphasis on presents and gifts when it's birthdays and Christmas and it's one of the best things!  So many people become greedy around days of celebration and I feel like the world sometimes forgets that it's not about how many presents you got!

I'm hoping the warm weather will make an appearance soon because it's raining and even though I love the rain I would like some sunshine!

Until next time, keep smiling :)  Em xx

The Harry Potter Tag

So a while back I was scrolling through Twitter and saw the words 'Harry Potter' and immediately clicked it!  It was a post on The Harry Potter Tag by Laura from the Savvy Student and I couldn't resist doing the tag myself!

What is your favourite book?
I think purely because it was the first book I fully read on my own it would be the Goblet of Fire.  At night my family would turn the telly off and we'd all sit in the sitting room and mum would read the books to us and I was hooked!  And when we stopped reading them together as a family I'd grab the book and just read!  I remember it was Chapter 15:  Beauxbatons and Durmstrang and basically my family never got the books back!  BUT it's my favourite book because new characters were introduced and also I loved the story line the most!

What is your favourite movie?
Would have to be the Half Blood Prince.  I remember we went to the opening night and I loved it!  I loved the drama between Ron and Hermione!  Especially the scene where Lavender hears Ron mumbling Hermione and not her name... Classic!  And the professors just standing in the background and taking it all in - that is gold!  But coming in a close second would be The Chamber of Secrets

What is your least favourite book?
I loved all the books so yeah I can't answer this!  I do remember I would physically start shacking them I read a certain chapter in the first book though.  The Man With Two Faces.  The start of that chapter just scared me so much!  My vivid imagination didn't help haha

What is your least favourite movie?
I didn't really like The Prisoner of Azkaban.  I don't know I just wasn't a fan!  I felt like the magic was lost in this movie when you compare it to the first two movies.

What parts of the book/movie make you cry?
Happy moments made me cry.  Sad moments made me cry.  I know when Cedric died and Sirius died.  Oh my goodness.  The damn people who thought "oh hey lets cut the sound, and do some slow motion stuff, and just make it so people cry - yeah that's great" those people oh my goodness!  What got me with Cedric's death was his dad and I'm like nope nope nope.

If you could hook up with any character, who would it be?
From thinking what they'd be like when they were at Hogwarts, Sirius.  I also love Oliver Wood, so him as well!

Who is your favourite character?
This is so HARD!  Mrs Weasley was always lovely.  I love everyone haha it's so hard to pick favourites.

Who is your least favourite character?
Umbridge.  Utter toad.  50 shades of too much pink and evilness!

What is your favourite quote?
Happiness can be found, even in the darkest of times, if one only remembers to turn on the light.

What would your patronus be?
I'd want it to be something small like a bird or a squirrel but now I'm thinking I'd like it to be a possum.  Ring tail possum to be specific!  We have them at my house and I love them!  But I did do a quiz....  And I got a pheonix which I was surprised by!  But I think I'll stick with a little ring rail possum :)

What would your boggart be?
I honestly don't know!  I hate not being able to move and being in confined spaces but I think it would probably turn into the people I love being hurt.

What would you rather:  the Elder Wand, the Invisibility Cloak, or the Resurrection Stone?
Invisibility Cloak!  This is the Slytherin coming out in me but I would honestly just pop the cloak on and bam I can go to the concert of my favourite band without having to pay, I could go up on stage and be right in the action and no one would know!  I'd also love it because you would be able to just walk around and not get bothered by anyone.

What house would you be in?
#SlytherinPride ;)  I'm on Pottermore and got sorted into Slytherin!  I'll be honest I never wanted to be in Gryffindor or Hufflepuff.  I always thought students from Gryffindor got away with a lot and it always looked like they were the centre of attention.  I'm quite good with grades so could have been in Ravenclaw but yeah I'm in Slytherin!  Resourceful, cunning, ambitious, good leaders, determined, clever - doesn't sound too bad!  I know we get a bad wrap from Voldemort and others but Peter Pettigrew was a Gryffindor and look what he did!  Andromeda Tonks was also in Slytherin so there is hope for not everyone in Slytherin being evil!

If you were on the Quidditch team, what position would you play?
I was told I would be a good Seeker because I have very good reflexes.  I'd either be the Seeker or the Keeper!

If you could bring one character back to life, who would it be?
Why one??!?!  Oh man!  Sirius.  Would have to be Sirius.

If you could meet any member of the cast, who would it be?
Emma Watson.  Or Maggie Smith.  Or Tom Felton.  It'd be a dream to meet anyone from the cast!

Were you happy with the ending?
Yes.  And then no.  Since when was Voldemort made of paper?!?!?  And wasn't that scene meant to take place indoors with a large audience?!?!  Little things like this really annoyed me about the films - I know the films were based off the books but come on!

Book wise, I loved it!  Sure the deaths took their toll but I absolutely loved reading the books!

How much does Harry Potter mean to you?
So much.  So very much.

If you love Harry Potter as much as me do this tag!  And let me know so I can give it a read!

Until next time, keep smiling :)  Em xx
